· ¼ tsp. vanilla or almond extract
· ½ Tbsp. honey
· ½ tsp. cinnamon
· ½ cup bananas, sliced, chopped or mashed
· ½ cup fast oats
· 1 tsp. chia seeds
· Non-compulsory toppings – darkish chocolate chips, peanut butter chips, coconut flakes, banana chips, whipped cream
Directions

· 1 pound udon or pad Thai rice noodles or linguine
· 1 cup shredded carrots
· 1 Tbsp. minced garlic
· ½ cup chopped scallions
· 3 cups cooked shredded or chopped hen (both from leftovers, freshly cooked or from a rotisserie hen)
· Garnish with roasted peanuts, sesame seeds and/or chopped cilantro

1. Add soy sauce, rice vinegar, 2 ½ tablespoons of sesame oil, brown sugar, ginger, Sriracha to the peanut butter jar with the leftover peanut butter.
